Ingredients

675 grs Cooking apples (before peeling)

225 grs Self-raising flour

225 grs Caster sugar

1½ level tsp Baking powder

2 large eggs

1 tsp Vanilla essence

140 grs butter

Method

Pre-heat the oven to 180 C (160C Fan) Gas Mark 4.

Grease & line a 10 inch, loose bottomed round cake tin.

Peel & core the apples, then cut them into reasonable sized slices – not too thick not too thin.

Into a large bowl, put the flour, baking powder and sugar.

In a large mug, beat the eggs lightly with the vanilla essence. Add this mix to the large bowl.

Melt the butter and pour into the large bowl. Mix until all the ingredients are well blended.

Put one third of the mixture into the prepared cake tin and spread it over the bottom.

Add the apple slices, layering them evenly. Add the remaining mixture and spread it evenly.

Bake in the oven for about 1½ hours, checking the cake after an hour to see that all is well.

Enjoy hot or cold.
