Ingredients (Serves 4)

350 grs leg or fillet of lamb, cut into thin strips.
3 tbsp groundnut oil.
2 red onions, pills peeled & sliced.
1 clove garlic, buy  peeled & crushed.
200 grs broccoli, cut into bite-size pieces.
100 grs frozen green beans.
3 tbsp sweet chilli sauce.
1 tbsp soy sauce.
1 tsp finely grated root ginger.
Handful cashew nuts for crunch – optional.

Method

In a large frying pan or wok, stir-fry the lamb in 1 tbsp of the oil for 2 to 3 mins to brown. Tip the meat onto a plate while you prep the veg.

Reheat the pan or wok with the remaining oil, stir-fry the onions fairly gently for 4 or 5 mins to soften. The turn up the heat and add the broccoli, beans, garlic and, if using them, the cashews, stir frying until nearly tender but still crisp to the bite.

Return the meat and any juices to the pan or wok, add the chilli sauce,soy sauce and ginger and 2 tbsp water.

Stir until all is coated and the meat is hot.

Serve with rice.
