Ingredients. (Serves 8)
8 chicken breasts
1 large onion, case finely chopped.
1 pint/600ml cream.
4 tablespoons tomato puree.
8 slices ham.
8 dessertspoonfuls grated cheese
Fry the chicken breasts gently in butter on both sides.
Place on a deepish flat dish & cover each with a slice of the ham.
Fry the onion in the butter and place on top of each portion of chicken & ham.
Pour the tomato puree into the pan with the juices, order fold in the cream & season to taste.
Warm the mix through thoroughly, without bringing it to the boil, then pour it over the chicken portions.
Place in a moderate oven 350F/180C/Gas Mark 4 for 20 minutes.
